Chicken BBQ Ranch Casserole

Ingredients

  • 3 cups cooked shredded chicken

  • 1/2 lb bowtie pasta

  • 1/2 cup cooked crumbled bacon

  • 2 cups shredded sharp cheddar cheese

  • 15oz can of corn, drained

  • 10oz rotel

  • 4oz diced green chilis, optional

  • 1/2 cup ranch dressing, any brand

  • 1/3 cup BBQ sauce, any brand

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

Directions

  • Preheat oven to 350 degrees
  • Boil the pasta according to the package directions, drain.
  • In a large bowl add the cooked pasta, cooked shredded chicken, bacon, 1 cup of the cheese, corn, rotel, green chilis, ranch, BBQ sauce, and seasonings stir to combine the ingredients.
  • To a 3 QT baking dish add the mixture in then top with the remanning cheese bake for 20 minutes or until the cheese is melty. Enjoy

    I made this for the first time tonight and it is delicious! I never thought bbq sauce and ranch would mesh so well with rotel and noodles but it is great. I am a fat person and thought only a half lb pasta wouldn’t be enough but with the bacon chicken, cheese, sauces and corn it is enough for at least 6 meals! This one is going in the rotation for sure.

    Can this be frozen and reheated? Looking at making some frozen casseroles for my daughter in college.
