Ground Beef and Rice Casserole

This ground beef and rice casserole is a budget-friendly, comforting dish made with simple ingredients and big flavor.

Ingredients 

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 yellow onion , diced
  • 1 ½ cups shredded cheddar cheese, divided
  • 1 cup carrots, diced
  • 10.5 oz can cream of mushroom soup
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp peppe
  • 1 tsp paprika

Instructions 

  • Preheat oven to 350 degrees F.
  • To a large skillet on the stove add the ground beef, break the ground beef up and cook it through. Once cooked remove any excess grease from the pan.
  • Add the cooked ground beef in into a greased 9×13 baking dish. Add in the uncooked rice, diced onion, 1 cup of the cheddar cheese, diced carrots, seasonings, stir well. Cover with foil and bake for 50 minutes.
  • Remove the foil, sprinkle with the remaining cheese and bake it for an additional 15 minutes.

    Hi Julia: I made the ground beef and rice casserole, but I noticed the directions do not include when to add the cream of mushroom soup and the beef broth. I assume you add it when you add the other ingredients (rice, onion, carrots, spices) but I thought you might want to edit your recipe here on your website to include this important addition.

    I love your cookbook and I’m enjoying trying many of your recipes.
