Ingredients

  • 2 large chicken breasts, sliced in half horizontally

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/3 cup flour

  • 2 tbs olive oil

  • 2 tbs butter

  • 2 tbs minced garlic

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1/2 cup grated parmesan cheese

  • 1/4 tsp oregano

  • 1/4 tsp thyme

  • 1/3 cup sun-dried tomatoes

  • 1 tbs fresh basil

Directions

  • Salt and pepper both sides of the chicken and cover in flour.
  • Heat a large saucepan over med heat with the olive oil and butter
  • Place the chicken in and cook 5-6 minutes per side until cooked completely through. Set aside and cover.
  • Add garlic to the pan and cook 45 – 60 seconds. Pour in the chicken broth scraping the bits of the base of the pan. Lower heat and add in the cheese, cream, and oregano. Low simmer for 3 minutes.
  • Add in sun-dried tomatoes, salt and pepper and the chicken. Simmer for additional 3 minutes.
  • Top with fresh basil and serve over egg noodles, rice or even cauliflower rice!

  2. I just made this and it was really good! But I don’t see in the instructions when to add the thyme. I assumed the same step as oregano? I will watch the video again to write it on my recipe card.

  3. Also, I had a little trouble getting the chicken to brown because there was too much oil and butter. I went by the recipe here, but in the video you put only 1 tblsp of each. I can’t wait to make it again since as good as it was anyway, I’m sure it will be even better! Thanks for posting!

    I made this tonight for dinner and it was delicious! I didn’t have sun dried tomatoes, so I just left that out. I just need a spoon and this sauce! Thanks for sharing.

  5. I’m not typically one to comment but I have made a few of your recipes now and each one has turned out great. My whole family loved this meal tonight including my 10 month old. Subbed fresh cherry tomatoes and served over egg noodles as you suggested. Thanks!

  7. I really like the simplicity of your meals. They look wonderful. I was wondering how many adults or teens are in the family you are feeding. There are two men in my family and myself so I sometimes end up with endless leftovers. It is great to see your young daughter around in the videos. Keep up the meal ideas as it helps me when I just don’t know what to do with protein I have taken out. Thanks.
