Parmesan Pasta

Simple, cheesy, and packed with garlic and Parmesan—this pasta dish is pure comfort in a bowl.

Ingredients 

  • 12 oz fettuccini
  • 12.5 oz can fire roasted tomatoes
  • 1 white onion
  • 4.5 cups chicken broth
  • 4 garlic cloves
  • 1 lemon
  • ½ tbs salt
  • 2 tbs olive oil
  • ½ tsp pepper
  • 1 tbs italian seasoning
  • 1 cup shredded parmesan cheese

Instructions 

  • In a large pot add in the oil, onion, garlic, lemon juice, fettuccini, salt and pepper, italian seasoning, and chicken broth.
  • Bring to boil for 7-9 minutes. Noodles will continue to cook after heat is shut off.
  • Turn off heat and stir in the cheese. Enjoy.

    Can this be halved and adapted for the instant pot?

    I made the Parmesan Pasta and followed it to the T. The liquid didn’t evaporate. I had to drain it. Did you drain your diced tomatoes or used undrained?

    It was very flavorful ☺️
