Parmesan Pasta
Ingredients
- 12 oz fettuccini
- 12.5 oz can fire roasted tomatoes
- 1 white onion
- 4.5 cups chicken broth
- 4 garlic cloves
- 1 lemon
- ½ tbs salt
- 2 tbs olive oil
- ½ tsp pepper
- 1 tbs italian seasoning
- 1 cup shredded parmesan cheese
Instructions
- In a large pot add in the oil, onion, garlic, lemon juice, fettuccini, salt and pepper, italian seasoning, and chicken broth.
- Bring to boil for 7-9 minutes. Noodles will continue to cook after heat is shut off.
- Turn off heat and stir in the cheese. Enjoy.

Can this be halved and adapted for the instant pot?
I made the Parmesan Pasta and followed it to the T. The liquid didn’t evaporate. I had to drain it. Did you drain your diced tomatoes or used undrained?

When do you add the fire roasted tomatoes, and do you drain them first?
