Slow Cooker Fiesta Chicken

Ingredients

  • 2 large chicken breasts

  • 2 tbs taco seasoning

  • 1 can sweet corn, undrained

  • 1 can rotel

  • 1 can cannelini beans, drained and rinsed

  • 8oz cream cheese on top

  • Optional: Chips or tortillas, guacamole, cheddar jack cheese, tomato, lime, lettuce, sour cream

Directions

  • In the slow cooker, add in all the ingredients starting with the first.
  • Cook on low for 6 hours or until chicken is cooked.
  • Once cooked, shred the chicken and mix everything together.
  • I served this over a bed of chips and topped with the guacamole, cheddar cheese, tomato, lime, lettuce and sour cream! (Also great as burritos or tacos)

  1. Just made this! Turned out great. It’s a little more liquidy that I wanted but next time I might drained the tomatoes and omit cream cheese. It’s really yummy as is though. Thank you for a great easy recipe!
