Slow Cooker Parmesan Garlic Chicken and Potatoes is made with simple ingredients and takes only 10 minutes of prep, and turns out amazing!

Ingredients

  • 2 lbs chicken breast (cut into smaller pieces)
  • 1 tbsp olive oil
  • 3/4 cup creamy Parmesan garlic sauce (such as Buffalo Wild Wings Parmesan Garlic Sauce)
  • 1 1/2 lbs golden potatoes (cut into smaller pieces)
  • 1/2 cup water
  • 1/2 tsp salt
  • Dash of pepper
  • 1/2 tsp paprika
  • 1/3 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Season the Potatoes: In a large bowl, toss the potatoes with olive oil, salt, pepper, and paprika until evenly coated.
  2. Layer in the Slow Cooker: Place the seasoned potatoes in the bottom of the slow cooker.
  3. Arrange the chicken pieces over the top of the potatoes.
  4. Mix the Sauce: In a small bowl, whisk together the creamy Parmesan garlic sauce and water until smooth.
  5. Pour the sauce evenly over the chicken.
  6. Cook: Cover and cook on Low for 6 hours, or until the chicken is cooked through and potatoes are tender.
  7. Add Cheese: About 10–15 minutes before serving, sprinkle the Parmesan and mozzarella cheeses over the top.
  8. Gently stir to combine and let the cheese melt.

Notes

  1. Season the potatoes before adding them to the slow cooker to make sure they are all seasoned completely for the best flavor
  2. Adding the potatoes to the bottom of the slow cooker ensures they cook completely and avoids burning the bottom of the chicken
  3. Reserve the cheese for the end to avoid browning the cheese
