2 ½cupsbeef broth + up to 1 cup more while pasta is cooking if needed
½cupbbq sauce
½tspsalt
¼tsppepper
2cupselbow noodles
1cupfrozen corn
1 ½cupsshredded cheddar cheese
½cupsour cream
Instructions
To a deep pan over medium heat add the ground beef and onion (or bell pepper) and cook the beef through, drain the access grease.
Add the noodles, BBQ sauce, frozen corn, and beef broth. Stir to combine and make sure the pasta is covered in the broth.
Simmer covered for about 12-15 minutes or until the pasta is cooked. Make sure you stir frequently while simmering so nothing burns to the bottom of the pan. If the broth reduces down too low while simmering you can always add in 1/2 cup more beef broth so the pasta doesn't dry out.
Once the pasta is tender turn the heat off then add in the cheese and sour cream. Stir to melt down the cheese and cream enjoy.
