If you have an Instant Pot silicone steamer basket insert, add it to the bottom of your Instant Pot. Add the potatoes with the water and a dash of salt and pepper. Put the lid on top, set the valve to sealing, and cook on high pressure for 10 minutes. If you didn’t cut the potatoes super small cook them for longer, about 12 minutes.
Once the potatoes are cooked remove any excess liquid from the Instant Pot, then add in the remaining mashed potato ingredients. Beat with an electric hand mixer or a potato masher until creamy.
Bowls
Place the chicken on a sheet pan and bake according to the package instructions.
To a small pot on the stove add the can of corn and heat through. To another small pot on the stove, add the gravy and heat through. Once the chicken is out of the oven assemble your bowls by putting some mashed potatoes to the bottom of your bowl then top with the corn, chicken, gravy, and cheese. Enjoy!
