Season the chicken breasts on each side with a dash of salt and pepper.
To a large skillet over medium heat add in 1 tbsp of olive oil. Once hot, add in the chicken and cook for about 4 minutes on each side, or until they are cooked through. Remove the chicken to a separate plate and set to the side. Keep all of the flavorful bits in the skillet.
Add in 1 tbsp olive oil along with the zucchini and onion. Cook for 2-3 minutes. Stir in the diced tomatoes, cream cheese, chicken broth, and seasonings. Cover and let simmer for 3-5 minutes, stirring occasionally, until the cream cheese is melted.
Place the chicken back in the skillet, cover with the sauce, and serve. Serve with egg noodles, mashed potatoes, rice, or cauliflower rice. Enjoy!
