Creamy Italian Sausage Pasta

Ingredients
- 1 lb ground Italian sausage
- 1 lb penne pasta
- 1 tbsp olive oil
- ½ yellow onion diced
- 1 tbsp minced garlic
- ½ tsp salt
- 3 tbsp cream cheese, cubed
- 14 oz diced tomatoes optional
- 2 cups heavy cream
- 2 cups chopped fresh spinach
- 1 cup shredded Parmesan cheese
Instructions
Cook pasta:
- Bring a large pot of salted water to a boil and cook the penne pasta according to package directions.
- Drain and set aside.
Brown sausage:
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Add the sausage, diced onion, garlic, and salt.
- Cook until the sausage is browned and no longer pink, breaking it apart as it cooks.
- Drain excess fat if needed, then return the sausage mixture to the skillet.
Add cream:
- Reduce heat to low and pour in the heavy cream, cream cheese, and diced tomatoes if using. Stir with a spatula and bring to a gentle simmer.
- Add spinach and cook for about 3 minutes, stirring occasionally, until wilted.
Add in cheese and pasta:
- Stir in the Parmesan cheese until melted and well combined.
- Add the cooked pasta to the skillet and toss until evenly coated in the sauce.
- Serve immediately.
