Easy chicken fried rice is a fast, flavor-packed dish made with tender chicken, veggies, and rice—all tossed in a savory stir-fry sauce. Better than takeout and ready in minutes!
1lbcooked shredded chicken breast OR use 1 lb of cubed ham instead of the chicken if you would like to make ham fried rice
3cupsjasmine ricecooked
2cupsfrozen mixed vegetables
2eggs
¼cuplow sodium soy sauce
Sesame seeds and green onions, for garnish
Instructions
To a large skillet over medium-high heat, add 2 tbsp of the olive oil. Once hot, add the diced onion and sauté for 3-4 minutes. Stir in the garlic and ginger and cook for one minute.
Stir in the chicken, rice, and mixed vegetables and cook for 4 minutes, stirring occasionally. To a small bowl crack the eggs and whisk until well beaten.
Push everything to one side of the pan and add the additional tablespoon of oil on the empty side of the pan. Once the oil is hot, add in the eggs and cook until scrambled. Once the eggs are scrambled, mix everything together and stir in soy sauce. Let everything cook together for 2-3 minutes, stirring frequently. Enjoy with sesame seeds and sliced green onions on top!
