Ground Beef Stir Fry is a delicious recipe filled with colorful vegetables cooked until perfectly tender, perfectly seasoned ground beef and served with a wonderful homemade stir-fry sauce.
½lbasparagusends trimmed and cut into bite-sized pieces
2medium zucchinisliced into half-moons
½large yellow oniondiced
other veggies mushrooms peas and more optional
For the Stir Fry Sauce:
3tbsplow-sodium soy sauce
1tspminced garlic
1tspfreshly grated ginger
1tsprice vinegar
1tbsptoasted sesame oil
2tbspwater
Instructions
Cook the Beef:
Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks.
Drain any excess grease, then transfer the beef to a plate and set aside.
Sauté the Vegetables:
In the same skillet, add the olive oil. Once hot, add all the vegetables and stir-fry for 5–9 minutes, or until they begin to soften but still retain a slight crunch.
Make the Sauce:
While the vegetables are cooking, whisk together all sauce ingredients in a small bowl. Set aside.
Combine and Finish:
Return the cooked beef to the skillet with the vegetables.
Pour in the sauce and quickly stir to coat everything evenly.
Turn off the heat—the sauce will thicken almost immediately.
Serve:
Serve hot as-is or over rice, noodles, or your favorite low-carb option.
