Season the pork chops on both sides with the salt, pepper, and oregano.
Heat a large skillet to medium high heat add in the oil once hot add in the pork chops.
Cook on each side for 2 minutes or until cooked through (will differ depending on how thick your pork chops are).
Once cooked remove to a plate and set to the side.
Make the gravy
To the same skillet the pork chops were cooked in over medium heat add in the butter once melted whisk in the flour.
Slowly whisk in the broth make sure to whisk it in slowly so it doesn't become clumpy. Sprinkle in the seasonings. Let simmer for 2-4 minutes to thicken slightly whisk in the sour cream.
Add the pork chops back into the pan and coat with the gravy.
