Heat 2 tablespoons olive oil in a pan over medium heat. Add the chicken and season with salt, pepper, Italian seasoning, garlic powder, and onion powder to your liking. Cook until the chicken is cooked through, then remove from the pan and set aside.
To the same pan, add 1 tablespoon more olive oil and 1 tablespoon of butter. Once hot, add in the zucchini and squash, and season with salt, pepper, and Italian seasoning to your liking. Cook until tender.
Add the chicken and Parmesan cheese to the pan. Stir to melt the cheese and serve. Enjoy!
