To a large saute pan or pot over medium high heat add in the butter and oil. When the butter is melted add in the chicken and season with 1/2 tsp salt and pepper brown the chicken on each side.
Add the ham to the pan and brown it on each side for about 2-3 minutes.
Add in the diced onion, minced garlic, diced tomatoes, chicken broth, rice, seasonings, and frozen peas. Stir well and bring this mixture up to a simmer then turn the heat to low let simmer covered for 18-22 minutes stirring occasionally until the rice is tender.
