baby gold potatoes

Salt and pepper
to taste

low-sodium vegetable or chicken broth

cup
heavy cream

cup
baby spinach

cup
Parmesan cheese
or more to taste
Instructions
Saute onion and pepper:
Heat olive oil in a large skillet over medium heat.
Sauté the chopped onion and bell pepper for 4–5 minutes until softened.
Cook sausage and potatoes:
Add the ground sausage and cook, breaking it apart with a spatula, until browned and fully cooked, about 5-7 minutes.
Stir in the quartered baby potatoes, tomato paste, Italian seasoning, and season with salt and pepper. Cook for 1 minute.
Add broth and cream:
Pour in the broth and heavy cream.
Cover and simmer for 15–20 minutes, until potatoes are fork-tender.
Add cheese and spinach:
Turn off the heat and stir in the spinach and Parmesan cheese.
Serve hot, optionally with crusty bread or a side salad.
