To a large skillet or pot over medium heat add the butter and olive oil. Once the butter is melted add in the diced onion and sauté for 3-4 minutes or until the onion is soft.
Add in the minced garlic, Italian seasoning and orzo stir well and let cook for 1-2 minutes.
Add in the chicken broth, heavy whipping cream and lemon juice stir well. Let simmer uncovered for 10 minutes stirring frequently so the orzo doesn't stick.
Once the orzo is tender add in the cooked shredded chicken, parmesan cheese, and spinach stir well and let the spinach wilt down and cheese melt. Serve and enjoy!
