Maple Glazed Chicken with Sweet Potatoes and Broccoli
Maple glazed chicken with sweet potatoes and broccoli is a sweet and savory sheet pan dinner made with tender chicken, caramelized veggies, and a touch of maple goodness in every bite.
Peel and dice sweet potatoes and chop broccoli. Set aside.
To a small saucepan, heat butter and maple syrup. Whisk well until butter is melted. Remove from heat and set aside.
Season chicken with salt, pepper, onion powder, and paprika.
Spray rimmed baking dish with nonstick spray.
Place the diced sweet potatoes and broccoli on the sheet pan. Drizzle the sweet potatoes with 1 tablespoon of olive oil and season with a dash of salt and pepper.
Put the chicken onto the sheet pan around the sweet potatoes. Pour half of the maple butter mixture over the chicken.
Bake for 15 minutes. Toss the veggies around and bake for an additional 15 minutes or until the chicken is cooked through. Pour the remaining maple butter over the top of the chicken and enjoy!
