Tender, flavorful chicken is served atop buttery, lemony rice. This One Pot Lemon Chicken and Rice is a quick , easy, and mouthwateringly delicious dinner.
Season the chicken breasts on both sides with 1 tsp salt, pepper, and 1 tsp of the Italian seasoning. To a large Dutch oven or pot over medium-high heat, add the butter and olive oil. Once the butter is melted and the oil is hot, add in the chicken and sear on each side for about 2 to 3 minutes. The chicken will not completely cook through at this point. Remove from a pan and set aside.
In the same pan that the chicken was cooked in, add the rice, broth, lemon juice, and remaining seasonings. Stir well and add back in the seared chicken cover with a lid and let simmer for about 18-22 minutes, or until the rice is tender.
