This hearty Italian sausage and orzo soup is loaded with savory sausage, tender orzo pasta, vegetables, and a flavorful broth. A comforting one-pot meal that’s perfect for weeknights or chilly days.
To a large pot or dutch oven add the olive oil, sausage, onion, carrots, and minced garlic. Break the sausage up and cook it through.
Stir in orzo and tomato paste.
Now stir in diced tomatoes, chicken broth, and seasonings. Bring mixture up to a simmer *stir frequently so orzo doesn’t stick to the bottom of the pot* and simmer for 10-12 minutes or until orzo is tender.
Stir in heavy cream and enjoy! We like to sprinkle fresh parmesan on top.
