Ingredients

Italian sausage

yellow onion
diced

large carrots
sliced

ribs celery
sliced

minced garlic

all-purpose flour

soy sauce

black pepper

Italian seasoning

dried oregano

chicken broth

heavy cream

red potatoes
cut into bite-size pieces

cups
shredded Colby Jack cheese
Instructions
Cook sausage in a large pot over medium heat for about 3 minutes, breaking it up.
Add onion, carrots, and celery and cook 5–7 minutes until softened.
Stir in garlic and cook until fragrant.
Sprinkle flour over mixture and cook 1–2 minutes.
Stir in soy sauce, salt, pepper, Italian seasoning, and oregano.
Gradually add broth and cream, then add potatoes.
Simmer 15–20 minutes until potatoes are tender.
Reduce heat and stir in cheese until melted and smooth.
Notes
Store leftovers in the refrigerator up to 4 days or freeze up to 2 months.
