Line a sheet pan with parchment paper. Place potatoes on the sheet pan and drizzle with 1 tbsp of olive oil and sprinkle with salt and pepper. Bake for 18 minutes.
Mix together the seasoning mixture in a small bowl. Sprinkle the chicken on both sides with the seasoning mixture reserving a small amount to use for the vegetables later.
Once the sweet potatoes are out of the oven, place the chicken breasts onto the center of the sheet pan, and place the broccoli and onions around the chicken and sweet potatoes. Drizzle the broccoli and onions with the remaining tablespoon of olive oil and sprinkle the remaining seasoning mixture over the vegetables.
Bake for 20 minutes, or until the chicken reaches an internal temperature of 165 F.
To a small bowl add the barbecue sauce and honey and whisk together to combine. Once the chicken is out of the oven, brush the barbecue sauce mixture over the top and bake for an additional 2 to 3 minutes. Enjoy!
