Ingredients

  • 1 Smithfield Applewood Smoked Bacon Tenderloin or any flavor
  • 1 lb asparagus trimmed
  • 1 lb Brussel sprouts halved
  • 1 lb golden potatoes cut into bite sized pieces
  • 4 tbs olive oil
  • 2-3 tbs lemon juice
  • Dash of salt and pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Instructions

Preheat oven and prep veggies:

  • Preheat the oven to 400 °F.
  • In a large bowl add the potatoes, asparagus, brussel sprouts, oil, seasonings, and lemon juice stir with a wooden spoon to combine.

Prepare sheet pan:

  • Place the vegetable mixture on a greased sheet pan place the pork tenderloin in the center of the sheet pan.

Bake tenderloin:

  • Bake for 40-45 minutes in the 425 °F oven check your pork to ensure its not burning at 30 minutes - if it is, cover loosely with foil for the remaining cooking until the pork reaches 145 degrees F internally with a meat thermometer.
