Slow Cooker Lentil Soup Stew is a hearty vegetarian crockpot dinner with lentils, carrots, celery, and tomatoes. Healthy, comforting, and freezer-friendly.
1 ½cupsgreen or brown lentilsrinsed and picked over
¾cupgrated Parmesan cheesefor serving
Instructions
Dice onion, slice celery and carrots, rinse lentils.
Add onion, celery, carrots, Italian seasoning, salt, pepper, garlic, tomatoes, broth, vinegar, brown sugar, and lentils to slow cooker. Stir.
Cover and cook on LOW 7 hours or HIGH 5 hours.
Stir, taste, and adjust seasoning.
Ladle into bowls, top with Parmesan, and serve.
