Ingredients

medium thick-cut pork chops
Salt and black pepper
to taste

yellow onion
sliced or diced

sliced mushrooms

packet beefy onion soup mix
3
ounces
tomato paste

water

tablespoon
low-sodium soy sauce
Instructions
Season both sides of the pork chops with salt and black pepper.
Place the sliced onion and mushrooms in the bottom of a slow cooker.
In a medium bowl, whisk together the beefy onion soup mix, tomato paste, water, and soy sauce until well combined.
Pour the sauce mixture over the onions and mushrooms, then stir gently to combine.
Arrange the seasoned pork chops on top of the vegetable mixture.
Cover and cook on Low for 5 hours, or until the pork chops are tender and cooked through.
Spoon the onion-mushroom gravy over the pork chops before serving.
Notes
Use medium thick-cut pork chops so they hold up during the slow cooking time.
Whisk the tomato paste into the sauce well before pouring it into the slow cooker.
Serve with mashed potatoes, rice, or egg noodles so the gravy has something to soak into.
Store leftovers with the gravy so the pork stays moist when reheated.
