Ingredients

skinless chicken thighs or chicken breasts

little red potatoes
cut into bite sized pieces

large carrots
peeled and cut into sticks

fresh green beans
trimmed

low sodium soy sauce
½
cup
honey
⅓
cup
ketchup

tablespoon
minced garlic

teaspoon
dried oregano

teaspoon
crushed red pepper flakes
Instructions
Place the chicken, potatoes, carrots, and green beans into the slow cooker with the chicken toward the bottom.
Whisk together the soy sauce, honey, ketchup, garlic, oregano, and crushed red pepper flakes.
Pour the sauce over the chicken and vegetables.
Cover and cook on LOW for 5 hours or HIGH for 3 hours until cooked through.
Serve warm, plain or over rice.

Chicken thighs stay especially tender.
Potatoes should be cut evenly.
Leftovers reheat well.
Sauce thickens as it cools slightly.
