Southwest Chicken
Bold spices, black beans, and corn bring big flavor to this zesty Southwest-style chicken dinner.

Ingredients
- 2 large chicken breasts
- ½ tsp garlic powder
- ½ tsp cumin
- ¼ tsp salt
- ¼ tsp pepper
- 1 lime juiced
- ½ cup shredded Mexican style cheese
Southwest Mixture
- 1 cup frozen corn
- 1 can black beans drained and rinsed
- 4 oz can diced green chilis
- ¼ cup chopped fresh cilantro
- 1 diced jalapeno
Instructions
- Preheat oven to 375 F.
- Slice the chicken beasts in half horizontally now you will have four pieces of chicken.
- Place the chicken in a greased 9x13 baking dish and season the chicken on both sides with the seasonings.
- In a medium sided bow all the ''southwest mixture'' ingredients in and stir to combine.
- Evenly pour the southwest mixture over the chicken then drizzle the lime juice on top. Sprinkle the cheese over everything and bake for 30-35 minutes or until the chicken is cooked. Enjoy
