1bagfrozen “seasoning blend” - onions, celery, red peppers green peppers, and parsley flakes (or just use one fresh onion and one fresh green bell pepper)

Instructions
To a large Dutch oven or pot over medium heat, add the oil. Once hot, add in the bag of onions and peppers and sauté for 4-5 minutes to cook out the moisture in the vegetables. Add in the beans, corn, rice bag, seasonings, and water. Bring the mixture to a simmer, stirring occasionally, and let simmer covered for 7-10 minutes, or until the rice is tender. Make sure you stir occasionally while simmering, so the rice doesn’t stick to the bottom of the pot. Ladle into bowls and top with toppings. Enjoy!
