Sprinkle the salt and pepper on both sides of the pork chops, then dip the pork chops in the flour to lightly coat.
To a deeper pan on the stove over medium heat add the oil, once the oil is hot add the pork chops to the pan and sear them on each side for 2 minutes (the pork chops don’t need to be cooked through at this point) remove the pork chops to a plate and set to the side.
In the same pan the pork chops were cooked in add the minced garlic, diced tomatoes, balsamic vinegar, broth, and honey stir well and bring up to a simmer for 1-2 minutes. Add the pork chops back into the pan and coat in the sauce. Let simmer together for 5-7 minutes and serve.
