Breakfast Sliders

Baked Hawaiian rolls loaded with melty cheese, crispy bacon, scrambled eggs, and brushed with a ranch glaze for ultimate breakfast sliders!

Ingredients

  • 9 eggs
  • ¼ cup milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 9 slices bacon
  • 1 ½ cups cheddar cheese shredded
  • 3 Tbsp butter melted
  • 1 Tbsp ranch seasoning mix
  • ½ Tbsp brown sugar
  • 12 oz package Hawaiian rolls

Instructions

  • Preheat oven to 350 degrees. Spray a sheet pan with nonstick spray, or line it with parchment paper.
  • Cut each slice of bacon into 4 pieces. Cook bacon in a large skillet over medium heat until crispy. Set aside. Carefully discard all but 1 Tbsp of the bacon grease in the pan (you will be cooking the eggs in the bacon grease).
  • To a large bowl, add in the eggs, milk, salt, and pepper. Whisk well.
  • Add egg mixture to the skillet the bacon was cooked in, then scramble. Set aside.
  • Cut the entire Hawaiian loaf horizontally. Without separating each roll, place the bottom part of the rolls on the sheet pan.
  • Sprinkle 1 cup of cheese on the bottom of the rolls. Layer scrambled eggs, bacon slices, and top with remaining cheese. Place the top buns over the cheese.
  • To a small bowl, add in the melted butter, ranch seasoning, and brown sugar, then whisk well. Brush mixture over the tops of the rolls.
  • Bake for 15-20 minutes or until the cheese has melted and the rolls are warm.
