To a large pot of boiling water add the pasta and cook according to the box instructions, drain and set to the side.
In a large skillet over medium heat add the oil. Once hot add in the sliced mushrooms, onion, and garlic. Stir and let the mushrooms and onion soften this should take about 8 minutes. Now add in the diced tomatoes, coconut milk, and seasonings stir well and let simmer for 4 minutes. Stir in the cornstarch slurry and pasta. Enjoy!
