To a large Dutch oven or pot over medium heat, add the ground beef and break it up. Cook until it’s about 50% of the way cooked through, then remove any excess grease in the pot. Add in the onion and minced garlic. Cook until the onions are softened and the beef is cooked through.
Stir in tomato paste, yellow mustard, ketchup, beef broth, and pasta. Stir well and bring to a simmer.
Cover and cook for about 10 to 15 minutes, or until the pasta is tender, stirring occasionally. Stir in the milk, sour cream, and cheese and heat until warmed through. Serve with chopped pickles on top and enjoy!
