3cupsCooked shredded chicken (I use a rotisserie chicken)
½cupSalsa
⅓cupSour cream
5ozSoftened cream cheese
1cupFresh spinachchopped
1cupMexican style cheese
12-15Corn tortillas(I microwave mine for 1.5 minutes to soften so they don't crack)
½cupVegetable oil
Instructions
To a large bowl add the shredded chicken, salsa, sour cream, cream cheese, spinach, and cheese stir to combine the ingredients.
Wrap the corn tortillas in a damp paper towel then microwave for 1.5 minutes or until they are all hot. (This will help the corn tortillas not crack when rolling them)
Place about 3 tbs of the chicken fillings in each corn tortilla then roll up tightly.
To a large sauce pan over medium heat add the vegetable oil and let it get hot, it should take about 3 minutes to get hot.
Once the oil is hot add in about 4 taquitos seam side down in the pan cook for about 2-3 minutes on each side or until golden. Repeat until all the taquitos are cooked. We like to top our taquitos with tomatoes, jalapeños, cilantro, sour cream, and lime. Enjoy!
