Chicken and Sun-Dried Tomato Pasta
Tender chicken, sun-dried tomatoes, and a creamy garlic sauce come together in this dreamy pasta dish that’s big on flavor and easy enough for any night of the week.

Ingredients

butter
1 ½

olive oil

lb
chicken breast
cut into bite sized pieces

dash
salt and pepper

tsp
minced garlic
1
cup
chicken broth
1
cup
heavy whipping cream
½
cup
mozzarella
¼
cup
parmigiana
1
tbs
corn starch
+ 1 tbs water to make cornstarch slurry
¼
cup
sun-dried tomatoes
Instructions
In a pan, melt the butter and 1/2 tbs oil.
Add the chicken, a dash of salt and pepper and cook the chicken completely. Set aside.
In the same pan, heat 1 tbs oil and add garlic heating until fragrant.
Pour in the chicken broth let simmer for 2 mins.
Add the whipping cream and let simmer for additional 3-4 mins.
Add in the cheeses then pour the cornstarch slurry in to thicken the sauce.
Add in the sun dried tomatoes, spinach and cooked chicken into the sauce and let the spinach wilt down.
Serve over egg noodles!
