Chicken and Sun-Dried Tomato Pasta
Ingredients
- ½ tbs butter
- 1 ½ tbs olive oil
- 1 lb chicken breast, cut into bite sized pieces
- 1 dash salt and pepper
- 3 tsp minced garlic
- 1 cup chicken broth
- 1 cup heavy whipping cream
- ½ cup mozzarella
- ¼ cup parmigiana
- 1 tbs corn starch , + 1 tbs water to make cornstarch slurry
- ¼ cup sun-dried tomatoes
Instructions
- In a pan, melt the butter and 1/2 tbs oil.
- Add the chicken, a dash of salt and pepper and cook the chicken completely. Set aside.
- In the same pan, heat 1 tbs oil and add garlic heating until fragrant.
- Pour in the chicken broth let simmer for 2 mins.
- Add the whipping cream and let simmer for additional 3-4 mins.
- Add in the cheeses then pour the cornstarch slurry in to thicken the sauce.
- Add in the sun dried tomatoes, spinach and cooked chicken into the sauce and let the spinach wilt down.
- Serve over egg noodles!
