Chicken and Sun-Dried Tomato Pasta

Tender chicken, sun-dried tomatoes, and a creamy garlic sauce come together in this dreamy pasta dish that’s big on flavor and easy enough for any night of the week.

Ingredients 

  • ½ tbs butter
  • 1 ½ tbs olive oil
  • 1 lb chicken breast, cut into bite sized pieces
  • 1 dash salt and pepper
  • 3 tsp minced garlic
  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • ½ cup mozzarella
  • ¼ cup parmigiana
  • 1 tbs corn starch , + 1 tbs water to make cornstarch slurry
  • ¼ cup sun-dried tomatoes

Instructions 

  • In a pan, melt the butter and 1/2 tbs oil.
  • Add the chicken, a dash of salt and pepper and cook the chicken completely. Set aside.
  • In the same pan, heat 1 tbs oil and add garlic heating until fragrant.
  • Pour in the chicken broth let simmer for 2 mins.
  • Add the whipping cream and let simmer for additional 3-4 mins.
  • Add in the cheeses then pour the cornstarch slurry in to thicken the sauce.
  • Add in the sun dried tomatoes, spinach and cooked chicken into the sauce and let the spinach wilt down.
  • Serve over egg noodles!
