Creamy Ham and Potato Casserole
Creamy ham & potato casserole is rich, cheesy, and perfect for using up leftover ham in a satisfying bake.

Ingredients
- 28 oz bag potatoes o'brien
- 8 oz cubed ham
- ¾ cup sour cream
- 10 oz can cream of chicken soup
- 1 cup colby jack cheese shredded
- ¼ cup tomato salsa
Instructions
- Preheat oven to 375 degrees F.
- To a large bowl add in the potatoes o'brien, ham, sour cream, cream of chicken soup, 1/2 of the cheese, and salsa stir well.
- Spray a large casserole dish or 9x13 baking dish with non-stick spray add the casserole in and spread it out. Sprinkle the remaining 1/2 cup of cheese on top and bake for 40 minutes or until bubbly and golden on the top and edges. Enjoy!
