Cook the pasta according to the box instructions. Once the pasta is cooked, strain it over the sink and rinse it super well with cold water to let it completely cool down. Add the cooled pasta to a large bowl.
Cook and cool hard boiled eggs. You can do this on the stove in boiling water for a few minutes, or in the Instant Pot like I did. Peel the eggs. Separate the egg whites from the yolks. Dice the egg white and set to the side.
To a medium bowl, add the yolks and mash with the back of a fork until completely mashed. Add the yellow mustard, garlic, mayonnaise, vinegar, salt, pepper, paprika, whisk well.
To the large bowl with the pasta, add the dressing mixture, along with the egg whites, green onion, and red onion. Stir well to coat evenly. Serve immediately or keep in the refrigerator until ready to serve. Enjoy!
