Cut the chicken thighs into small pieces and remove any fatty pieces. To a pan on the stove over medium high heat add the oil once the oil is hot add in the chicken season with the salt and pepper sear the chicken on each side for 3 minutes. Turn the heat to low let the chicken cook completely through. Add in the brown sugar and soy sauce stir well and let simmer for 5 minutes stirring often until the sauce thickens. Enjoy over rice or anything!
