2cupscooked shredded chickenI used a rotisserie chicken
½cupMexican style cheese
¼cupsliced green onions
⅓cupsalsa
3tbssour cream
11ozbag mini street flour tortillas
½cupolive oil
Instructions
In a medium sized bowl add the chicken, cheese, green onions, salsa, and sour cream mix well.
Wet a couple paper towels and wrap the tortillas in the paper towels microwave for 1 minute. This will help the tortillas not crack and stay in shape when assembled.
Add 1-2tbs of the chicken mixture in each tortilla and wrap tightly. (Don't overstuff the tortillas)
To a deep pan over medium heat add the olive oil and let it get hot, add the taquitos and cook for 1-2 minutes on each side or until golden brown. Remove to a separate plate lined with paper towels. Enjoy.
