Flour Tortilla Loaded Taquitos

Ingredients

  • 2 cups cooked shredded chicken – I used a rotisserie chicken

  • 1/2 cup Mexican style cheese

  • 1/4 cup sliced green onions

  • 1/3 cup salsa

  • 3 tbs sour cream

  • 11oz bag mini street flour tortillas

  • 1/2 cup olive oil

Directions

  • In a medium sized bowl add the chicken, cheese, green onions, salsa, and sour cream mix well.
  • Wet a couple paper towels and wrap the tortillas in the paper towels microwave for 1 minute. This will help the tortillas not crack and stay in shape when assembled.
  • Add 1-2tbs of the chicken mixture in each tortilla and wrap tightly. (Don’t overstuff the tortillas)
  • To a deep pan over medium heat add the olive oil and let it get hot, add the taquitos and cook for 1-2 minutes on each side or until golden brown. Remove to a separate plate lined with paper towels. Enjoy
