Tender chicken smothered in a flavorful tomato sauce tops toasted buns and is finished off with melty cheese. These Italian Chicken Sandwiches are so simple to make and end up so tasty!
½cupItalian dressing (I like to use the Olive Garden brand for this recipe)
2tbsptomato paste
2tspbrown sugar
1tspsalt
½tsppepper
2largechicken breasts (or 1.5 lbs)
14ozcan petite diced tomatoesdrained
Brioche rolls or hamburger buns
1cupshredded mozzarella cheese
Instructions
To a small bowl, add the Italian dressing, tomato paste, brown sugar, salt, and pepper and whisk to combine. Place the chicken into the slow cooker, then pour the drained can of diced tomatoes over the chicken. Pour the Italian dressing mixture over everything, and cover the slow cooker with a lid.
Cook on LOW for 6-7 hours or HIGH for 4-5 hours, or until the chicken is cooked through. Once the chicken is cooked through shred it up in the slow cooker using two forks, an electric hand mixer, or a meat masher.
Turn your oven to the broil setting. Open the buns up and place them on a large sheet pan. Cover the inside of the buns with the mozzarella cheese and broil for about 2 minutes, or until the cheese is melted and the buns are golden. Ladle the shredded chicken with a slotted spoon onto the buns and enjoy!
