To a large sauce pot over medium heat add in the oil. Once hot, stir in the minced garlic for 20 seconds and then stir in the tomato sauce, crushed tomatoes, 1 tsp salt, and 2 tsp Italian seasoning and stir well. Turn heat to low and let simmer covered for 12 minutes.
Work on the meatloaf now. Crush the saltine crackers up until they are crumbs. To a large bowl add the saltine crumbs, eggs, and milk then stir well. Once well combined let sit for 7 minutes so the saltines can absorb the milk. Now add in the remaining meatloaf mixture ingredients except for the cheese. Stir to combine the ingredient well.
Grease a 9x13 baking dish with non-stick spray place the meatloaf mixture into the baking dish and form it into a loaf. Cover with aluminum foil and bake for 55 minutes.
Remove the aluminum foil and sprinkle the cheese over the top. Bake for an additional 15-20 minutes. Enjoy!
