Mini Egg Bites
Mini egg bites are protein-packed, portable, and easy to customize—perfect for breakfast meal prep or on-the-go mornings.

Ingredients
- 1 white onion, diced small
- 1 cup fresh spinach, chopped small
- 1 red bell pepper, diced small
- 13 eggs
- ⅓ cup milk
- 1 tsp garlic powder
- 8 oz diced ham
- 1 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
Instructions
- Preheat oven to 350 degrees F.
- To a large bowl add in the eggs and milk, whisk well to break the yolks, now add in the rest of the ingredients and stir.
- Spray a mini muffin pan with non stick spray (I like to use a silicone pan so they come out easy) pour the egg mixture in - don't over flow - bake for 13 minutes or until the egg has set. Repeat until the egg mixture is gone - You will make around 50. Enjoy.
