In a medium sized bowl, add the eggs, milk, salt, pepper, bacon, mozzarella cheese, and spinach whisk to combine.
Cut pie crust into 3.5 inch rounds and roll out twice with a rolling pin to make them thinner. Makes about 24 rounds. (if any excess dough roll out and continue to make more)
Grease 2 regular sized muffin tins. Place pie crusts inside creating a cup. Scoop 3 tbs of the egg mixture in each cup. Bake for 25 minutes or until the egg has set.
