To a large pot add in the oil once hot add in the cubed chicken, onion, bell pepper, 1 tsp curry powder, 1/2 tbsp salt, and pepper stir well and cook for 3-4 minutes (the chicken will not be completely cooked through) remove the chicken to a plate and set to the side.
To the same pot add in the rice, broth, water, 1/2 tbsp salt, 2 tsp curry powder and stir well. Bring this up to a simmer and let simmer uncovered for 3 minutes while stirring occasionally. Now add back in the chicken cover with a lid and let simmer covered for 15-18 minutes stirring occasionally so the rice doesn’t stick to the bottom of the pot, until the rice is tender and the chicken is cooked through.
Once the rice is tender add in the coconut milk and cilantro, stir well and enjoy!
