Cut the ends off and slice the zucchini into quarters.
On a sheet pan, coat all the zucchini's with 1 tbs olive oil, salt and pepper and then arrange skin side down. Evenly spread breadcrumbs, parmesan, and drizzling with the remaining 1 tbs olive oil.
Bake for 12 - 18 minutes, broil for additional 1 - 2 minutes.
