Parmesan Crusted Zucchini Quarters

Ingredients

  • 4 medium zucchinis

  • 2 tbs olive oil

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 tbs breadcrumbs

  • 2 tbs grated parmesan

Directions

  • Set oven to 450 degrees.
  • Cut the ends off and slice the zucchini into quarters.
  • On a sheet pan, coat all the zucchini’s with 1 tbs olive oil, salt and pepper and then arrange skin side down. Evenly spread breadcrumbs, parmesan, and drizzling with the remaining 1 tbs olive oil.
  • Bake for 12 – 18 minutes, broil for additional 1 – 2 minutes.

    This looks like a good way to serve all that zucchini coming out of the garden. I will definitely add this to my repertoire!
