In a small bowl add the sauce ingredients and whisk together.
In a sauce pan on the stove add 1 tbs olive oil once it's hot crack both eggs in and scramble. Once the eggs are cooked remove them to a separate plate and set aside.
Add 1 tbs olive oil into the same sauce pan you cooked the chicken in then add the diced onion and carrots saute for 3-5 minutes. Add the garlic and ginger in cook for 30 seconds.
Add in the chicken and cook it through. Once cooked add in the cooked white rice stir everything to combine.
Add the sauce we made earlier along with the peas, scrambled eggs, and pineapple stir to combine and let everything cook together for 5-8 minutes. Enjoy!
