Pineapple Fried Rice

Sweet pineapple, savory rice, and crisp veggies come together in this quick and flavorful pineapple fried rice.

Ingredients 

  • 3 cups COOKED white rice
  • 1 lb cubed chicken breast
  • 3 large carrots , diced
  • 1 diced white onion
  • 2 eggs
  • 2 tbs olive oil
  • 1 tbs minced garlic
  • 1 tbs minced ginger
  • 1 cup frozen sweet peas
  • ¼ cup diced pineapple

Sauce

  • 1 tbs fish sauce
  • 1 tbs sugar
  • 1 dash salt and pepper
  • 1.5 tbs low sodium soy sauce

Instructions 

  • In a small bowl add the sauce ingredients and whisk together.
  • In a sauce pan on the stove add 1 tbs olive oil once it's hot crack both eggs in and scramble. Once the eggs are cooked remove them to a separate plate and set aside.
  • Add 1 tbs olive oil into the same sauce pan you cooked the chicken in then add the diced onion and carrots saute for 3-5 minutes. Add the garlic and ginger in cook for 30 seconds.
  • Add in the chicken and cook it through. Once cooked add in the cooked white rice stir everything to combine.
  • Add the sauce we made earlier along with the peas, scrambled eggs, and pineapple stir to combine and let everything cook together for 5-8 minutes. Enjoy!
