To a large skillet over medium heat, add the olive oil. Once hot, add the vegetables and cook for 7–8 minutes, stirring occasionally, until they start to turn golden brown around the edges.
Meanwhile, bring a medium pot of water to a boil. Add the ramen noodles (without the seasoning packets) and cook for 3–4 minutes. Drain well.
